Linguica Pizza and Portuguese Hash

Linguica sausage is an extremely versatile ingredient that adds depth and flavor to many dishes. From caldo verde or francesinha soups to sandwiches (Portuguese hash for instance) or pizza toppings – Linguica makes an impactful statement about what culinary versatility looks like!

Preheat the oven to 500degF and lightly flour a surface before rolling/stretching pizza dough to form a 12- to 14-inch round. Spread tomato sauce on the crust leaving a 1-inch border, sprinkle mozzarella cheese over it, and dot with linguica pieces as needed.

Caldo Verde

Caldo Verde (green soup) is an iconic Portuguese and Brazilian dish. Crafted using kale and Portuguese sausage (chorizo or linguica), this warming soup is beloved by both peasant households as well as luxury hotels alike.

Heat one tablespoon of oil over medium-high heat in a large pot. Add sausage and cook until browned and fat has rendered. Saute onion and garlic for five minutes until softened before adding potatoes and stock or water and simmering until very tender (around 20 minutes). Caldo Verde is usually vegetarian-based; for a vegan version, simply replace linguica/chourico with vegetable bouillon/broth.

Many people can make this recipe more nutritious by swapping out the kale for collard greens or other leafy greens, and by switching up their potatoes. We prefer Japanese yams as they’re lower in carbs and Paleo-compliant; you could use any white-fleshed variety. For Whole30 compliance, simply omit or replace with plant-based sausage without sugar or preservatives.

Francesinha

The Francesinha is one of Portugal’s signature sandwiches. A caloric explosion, it combines different kinds of bread with steak, two kinds of sausages, and ham as well as cheese topped with an irresistibly tasty beer sauce – and is an absolute must when visiting Porto where its creation took place.

Daniel da Silva, an immigrant from France living in postwar Europe who eventually settled in Porto after serving, created this bizarre sandwich during the 1950s. Inspired by croque monsieur, he set about adapting it for local palates to produce the Francesinha: an enormous stack of meat and bread topped off by fried eggs – complete with fries – perfect for sharing!

Pizza

Linguica pizza is a traditional Portuguese and Brazilian dish, created by placing linguica on top of a pizza with cheese and tomato sauce before baking it in the oven. Perfect for parties, entertaining friends and family – and suitable even for vegetarians!

To create the pizza, begin by preheating your oven to its highest setting with a pizza stone in place. While waiting, set up your mise en place by placing out linguica, ricotta, mozzarella cheese, olive oil, herbs & spices before starting to form your pizza shell when the dough has doubled in size.

Once the crust is formed, spread the sauce across its entirety. Sprinkle linguica over the sauce before layering cheese slices starting at the center and slightly overlapping to form an outer rim of cheese slices. Finally, top your pizza off with garlic cloves and parmesan cheese before baking for 12 to 15 minutes, or until all the cheese has melted and the crust has turned golden brown.

Remove your pizza from the oven, and allow it to rest for several minutes before garnishing it with fresh cilantro leaves if desired and serving warm. It can also be enjoyed cold as an option!
