How Do Slush Machines Work?
The most important part of a slush machine is its cooling system. This is what turns the flavoring mixture into a yummy frozen treat.
A component called the evaporator turns refrigerant, or the stuff that keeps things cold, from a liquid into a gas. Because of this reaction, the liquid syrup is then cooled to a perfect 3-degrees Celsius. At this temperature, slush begins to form.
Slush won’t freeze solid thanks to the delicious ingredient known as sugar. That’s right, sugar crystals act as an anti-freeze, preventing the water molecules from sticking together.
Because sugar is so critical, the ratio of water to syrup must be perfect.
Slush machines also include a mixer. This moves the slush around, helping to ensure every part of it is at the perfect temperature. This movement also helps keep the slush from freezing solid.

Each slush machine is a little bit different.
Most machines freeze in less than an hour. The newer, more efficient machines can freeze in as little as 20 minutes.
